Tearoom Treats: Coconut Ice

This week for our Tearoom Treats, we’ll be making Coconut Ice. There’s no cooking required, so it’s a great one to involve the kids with!

You will need:

  • 10 tablespoons of condensed milk (about half a tin)
  • 225g icing sugar
  • 175g desiccated coconut Food colouring

Add all of the ingredients, except the food colouring, into a bowl and mix together until it comes together in a big, thick ball.

Take half of the mixture and place it on a piece of foil or greaseproof paper that had been dusted with icing sugar, and shape it into a rectangle. Colour the other half of the mixture with your food colouring (we may have a bit over the top with ours!) and shape it in the same way as you did for the first piece.

Place once rectangle on top of the other and peel off the backing foil or paper. Press them together firmly and neaten the edges so they’re the same size. Cover with the leftover backing paper or foil and leave to dry for a few hours. Cut into squares and enjoy!

Put your leftover condensed milk into a container and keep it refrigerated for next week – we’re going to make some fudge with that!
